Skip the drive-thru and make your own upgraded version of a burger and fries.

Directions

Step 1
Line an 11- by 7-inch baking dish with parchment paper. Bring 4 cups water to a boil in a large pot. Slowly whisk in grits. Reduce heat and simmer, stirring often (grits will bubble in spots), until liquid has absorbed and grits are tender, 20 to 25 minutes. Remove from heat and season with kosher salt. Transfer to prepared dish and let cool slightly; cover and refrigerate until firm and completely chilled, at least 2 hours.
Step 2
Meanwhile, whisk together mustard, ketchup, mayonnaise, onion, and pickle in a bowl. Combine pork, scallions, and Worcestershire in a separate bowl; shape into 4 patties. Season with salt and pepper.
Step 3
Heat 1 1/2 inches oil in a large deep pot to 350°F. Transfer grits to a cutting board, discard parchment paper, and cut into 3- by 1-inch sticks. Fry, in 3 batches, until golden brown and crisp, 4 to 6 minutes. Transfer to a paper towel-lined plate and sprinkle with flaked sea salt.
Step 4
Season burgers with salt and pepper. Heat 1 tablespoon oil in a large skillet or grill pan over medium heat. Cook burgers until just cooked through, 5 to 6 minutes per side.
Step 5
Spread some of the sauce on buns; top with burgers and lettuce, dividing evenly. Serve fries with remaining sauce alongside.
