My “Go-to”Baked Chicken Wings Recipe
Well, we are finally here. The weekend I’ve been waiting for since February. It’s almost football season. But before it’s football season. It’s fantasy draft time. Which at our house is a big deal.

This year we are hosting two drafts at our house, one is tomorrow and the other one is next Tuesday. Tomorrow is for my all ladies league. We are meeting in the morning and doing a brunch draft, which will include these Prosciutto Egg Cups, an Apple Cinnamon Coffee Cake (recipe coming soon) and of course Mimosas. Because well, you can’t have a girls brunch without Mimosas. 🙂

But on Tuesday we are hosting a draft for one of my husbands leagues… ps this year he’s in four leagues. He’s crazy! Honestly I don’t know how he’s going to keep up. But that’s beside the point. Men don’t want Mimosas at their draft. They want Wings and Beer… enter ME the Chicken Wing Master!

How do you make Baked Chicken Wings?
The Crispy exterior is everything! At a restaurant, most of the time, the chicken wings are thrown into a fryer to cook them until done and to create that crispy crunchy exterior. But guess what? I’ve broken the secret to the perfect “doneness.” My baked chicken wings recipe has the perfect balance of tender interior and crispy crunchy exterior. You’re welcome!

 

Quality Chicken Wings: If you want a good end product you have to start with a quality product. Buy your chicken wings from the butcher and make sure they are raw. If you have to buy frozen, just make sure you’re wings are completely thawed before baking them.
Prep your Chicken Wings: Pat your chicken wings dry with a paper towel. Then place them into a bowl and toss with avocado oil, salt and pepper.
Bake Them: Preheat the oven to 400°F. Prepare baking sheets by lining with tin foil (this helps with easy cleanup afterwards) Then place a baking cooling rack on top of the lined baking sheet. Using a baking rack will allow the fat to drip off the chicken as it bakes and helps with a crispy exterior. Bake chicken wings for 40 minutes, flipping half way through.

How to make your wings so crispy?
The KEY to getting crispy chicken wings every time is NOT adding baking soda or baking powder. It’s placing them under the broiler for 8-10 minutes. So, after your done baking your chicken wings for doneness – FDA standard is 165°F (the best way to check this is with a meat thermometer) remove them from the oven. While they are resting, turn your broiler on to HIGH. (usually it’s 550°F) Place your baked chicken wings under the broiler for 8 to 10 minutes. Trust me, this does the trick every time!

 

Can chicken wings be made ahead of time?
YES! If you are making this baked chicken wing recipe for a party, early prep is essential. The best way to make these wings ahead of time while still being left with a hot crispy wing is to bake them until the meat is done the day before. So, you would bake at 400°F for 40 minutes. Remove from the oven, let cool and then place in an air tight container. The next day, remove chicken wings from your refrigerator to “take the chill off.” Place wings back on a baking rack lined baking sheet and place under broiler on HIGH for 8-10 minutes. Then toss wings with fresh sauce and serve!

How to make Honey Sriracha Sauce?
Ingredients you’ll need for this Sweet Spicy Sauce from heaven are: unsalted butter, fresh ginger, fresh garlic, smoked paprika, ground cloves, honey, sriracha and lime juice.

 

To a small saucepan over medium high heat, add butter. Once melted add in fresh ginger and garlic. Stir until fragrant, about 1 minute.
Next add in smoked paprika, ground cloves, honey, Sriracha and lime juice. Stir to combine and let simmer for 4-5 minutes.
How hot is Sriracha?
Sriracha Sauce is made with chili pepper, sugar, garlic, vinegar and salt. Chili Pepper is definitely not the hottest pepper out there, so this sauce is not “make you cry” hot, but it does pack a punch of heat. I’d say on a scale of 1 to 5, it’s probably a 2-3 range.

The chicken wings themselves are incredible! I use this base cooking technique for all of my wings and then change up the sauce for the mood I’m in. But this Honey Sriracha Sauce is by far my favorite. It’s sweet, sticky, spicy and then has a slight smokiness to it from the smoked paprika. I guarantee these will be devoured.
