Whew! We made it through holiday #1!
Yesterday was a blast! We started the day with my side of the family and then my husbands side (including his sisters & their families from out of town … 17 in all) came over! The cousins all played together, we warmed up the pool and enjoyed just spending time together and catching up! It was absolutely wonderful. I hope all of you had a great time with friends and family yesterday and made lots of memories. That you stuffed yourselves to the brim, embraced thankfulness and took a nap on the couch. 🙂
Today is the day after Thanksgiving. To some it’s known as Black Friday and others it’s known as a day of rest from the “crazy” that was the day before.
But to us, it’s our Christmas Tree Day. Every year we go out the day after Thanksgiving to pick out our tree and decorate the house. Now, truth be told I decorated part of our house already. The reason being we have 5 extra people staying here right now and I didn’t want to whip out a bunch of boxes while they were here. So I decorated a little early. 🙂 hehe. What can I say, I love Christmas! So upstairs it’s December and downstairs is November! Fair enough right?

Any who, with Thanksgiving now done it’s time to detox a little bit to prepare for the feast that is the month of December.
And these Pomegranate Honey Ricotta Toasts are pure perfection. Light, simple and super easy to make. Which in my book is NECESSARY the day after Turkey Day. Leftovers are nice, but I need something a little easier on the tummy.

For this ricotta toast, literally all you need is a toaster to make it happen. Well, that and maybe a spoon. All you do is toast the bread, slather some ricotta on top, sprinkle on some pomegranate arils, fresh thyme, candied pecans and drizzle with honey for the finishing touch. It’s amazing!
I had these for breakfast but you could totally make them into an appetizer by toasting up some baguettes instead and topping them with the same ingredients. It’s a light holiday bite your guests will love!
