Balsamic Grilled Caprese Chicken

I’ve been waiting a while to share this one with you. But alas, the day has finally come and you guys are in for one delicious treat!

Juicy balsamic marinated chicken seared on the grill until it gets all caramelized and delicious, then topped with gooey mozzarella cheese, fresh tomatoes and basil. Oh and a drizzle more of balsamic if you have some left. Because you can’t go wrong with more balsamic, am I right?

What is Grilled Chicken Caprese?
Caprese is a simple Italian dish that usually consists of fresh mozzarella, tomatoes, and sweet basil then seasoned with salt and olive oil. So, Grilled Chicken Caprese is grilled chicken that is topped with all the same ingredients in a caprese – fresh mozzarella, tomatoes and basil. It’s delicious and light!

 

How to make Balsamic Marinade for Chicken?
In a small bowl, add balsamic vinegar, olive oil, dijon mustard, honey, garlic and salt to taste. Whisk ingredients together and pour half of the mixture over the chicken to marinade. Reserve the other half of the marinade for glazing the chicken while it is grilling. Marinade chicken for at least 15 minutes or up to 2 hours.

How to Grill Caprese Chicken?
Heat grill to medium high heat, about 375-400 degrees.
Clean grill grates with grill brush and rub with oil.
Place marinaded chicken on grill. Grill for 4-5 minutes on the first side. Flip and grill on the other side for 4 minutes.
Then place a slice of fresh mozzarella and a tomato on top of the chicken. Close the grill and cook an additional 1-2 minutes, until the cheese is melted.
Remove from grill and let rest for 5 minutes.
Garnish with fresh chiffoned basil and any remaining balsamic marinade.
Serve.
