Well, I have officially moved into creating easy dinner recipes for those “I don’t have time for this” school nights. My son starts school in a week, which is nuts, but I’m kinda ready and kinda not. I felt like the summer flew by with the trips and everyone getting sick that we barely had time for anything. I makes me sad to think that this is the last weekend of summer!

 

This fall I’m really going to try and focus on low carbish meals. I say “low carbish” because I’m a strong believer our bodies still need carbs. They help build muscles and support brain function, you legitimately need carbs to function! These Philly Cheesesteak Stuffed Peppers totally fit the bill. They have all the same great flavors of a classic philly cheesesteak stuffed in a bell pepper.

A classic Philly Cheesesteak is filled with thinly sliced steak, lots of melted cheese and sautéed peppers all stuffed in a soft toasted hoagie bun.

What steak for Philly Cheesesteak?
Traditionally they are made with thinly sliced ribeye, the marbling really adds to the flavor of the sandwich. However, you could also use thinly sliced filet mignon or top sirloin for good flavor but more affordable price.

How to make the Philly Cheesesteak Stuffed Peppers?
Heat a large skillet to high heat. Spray with cooking spray and place seasoned top sirloin in pan. Sear both sides of the steak, about 2-3 minutes per side.
Remove steak from pan and let rest. Immediately spray pan with cooking spray again and add mushrooms, saute until browned, about 3-4 minutes. Then add in peppers and onions to the pan. Saute for 2-3 minutes, until the vegetables are tender and onions are somewhat translucent.
To a large bowl, add thinly sliced cooked top sirloin, sautéed vegetables, mayonnaise, dijon mustard, garlic powder and ground black pepper. Top with mozzarella cheese or provolone. Using a spoon, stir to combine all the ingredients.
Stuff each bell pepper half with steak mixture.
Bake for 30 minutes at 400 degrees F.
Garnish with chopped parsley and serve!
